Sandy Phelps and Pam Crockett
"It all started in the summer of 1999 when my husband decided to order 10,000 lbs. Of wheat from a farmer in Idaho. You see . . . it was such a great buy! Hmmmmmm . . . a great buy? Do you know how much space 10,000 pounds of wheat takes up? We have a double car garage, and it took up the space where my car used to be parked.
"Then, we had to can it, but the LDS church cannery was booked up through the millennium. This meant we had to purchase our own canner and cans. We canned all the wheat, but then the problem became, where do we store it? We ended up having to build a cellar. Now that we had it canned and put away, we asked ourselves, what do we do with 10,000 pounds of wheat? I know one can bake bread with it, but that's all I knew about the grain."
Crockett says that she began by studying, researching, and practicing with different wheat recipes. She was invited to give demonstrations on wheat, sharing some of the things she had learned. Along the way, friends started suggesting that she put a cookbook together. With the help of her close friend Sandy Phelps, the cookbook became a reality.
The cookbook is filled with recipes on "Simple Wheat Cookin'." Pam and Sandy say they have enjoyed compiling ideas and tasty recipes. They found that people, in general, had gotten away from using the small whole-wheat kernel for cooking, instead, becoming more reliant upon processed, and less nutritional flours.
Crockett states, "There is so much more to wheat than bread alone. You're invited to a feast of fun and easy wheat recipes--just waiting for you to enjoy."
According to Crockett, the book is the first in a series of proposed cookbooks that will be published under the Crockett's Corner trademark. This first book on wheat is endorsed by 2000 Utah Mother of the Year, Barbara Hale.
Crockett says her motto is, "Eat what you store, and store what you eat--just remember to make sure, some of what you store is wheat!"
